Vinification

grapes are harvested by hand and placed in small boxes. Once in the cellar, the grapes are destemmed and softly pressed. The cold prefermentation maceration of the skins in contact with the must lasts 3-5 hours. After racking, the alcoholic fermentation is activated by selected yeasts and takes place in steel tanks at a controlled temperature of 15-17 ° C. The wine is clarified using substances of vegetable origin (biovegan).

Aging potential

the wine evolves over time acquiring a surprising charm. It should be tasted after 2 years.

organoleptic characteristics

the wine is crystal clear and shows a lively cherry pink color, warmed by pleasant and elegant coral reflections. On the nose, an elegant sensation of wild rose is clearly recognizable, followed by sweet fruity notes of ripe cherry, pomegranate and nectarine, well balanced by the vivacity of the Mediterranean scrub scents. The taste is fresh and savory, balanced by the right softness given by the roundness of the body. The wine is absolutely dry. The sip ends with a persistent fruity aftertaste, in line with the nose. It leaves the mouth clean and pleasantly fresh.

Service notes

Serve at a temperature of 10-12 ° C in tulip shaped glasses.
