grapes are harvested by hand and placed in small boxes. Once in the cellar, the grapes are destemmed and softly pressed. Maceration on the skins takes place in temperature controlled steel tanks with intense initial pumping over and delestage (especially in the initial phase) and lasts for about four weeks. Selected yeasts activate the fermentation. The wine is clarified using substances of vegetable origin (biovegan).
the wine, after being aged for 12 months in barrique, rests in steel silos for three years before being bottled. Don Filippo is a cru produced in an extraordinary limited edition of 5200 bottles.
The sight shows a strong character given by its lively and intense garnet red color. The scents strongly and finely represent the characteristics of Primitivo di Manduria. The bouquet is definitely based on red fruit: cherry, plum and blood orange. These aromas are flanked by sweet spices such as cinnamon and star anise and toasted scents of cocoa. A warm and enveloping scent of licorice and carob is pleasantly teased by sensations of Mediterranean scrub and balsamic notes of eucalyptus. The taste is remarkably balanced. The wine enters soft and round, but fresh notes give dynamism to the whole. The tannins are sweet and not invasive at all. The wine structure and its freshness perfectly balance the alcoholic sensation. This makes Don Filippo a wine with a smooth sip and a long persistency that recalls the intriguing fruity notes previously perceived.
