grapes are harvested by hand and placed in small boxes. They are harvested partly overripe, directly from the plant, and partly left to dry in the September sun of Salento, on the traditional Apulian cannizzi (racks). Once in the cellar, the grapes are destemmed and softly pressed. Maceration on the skins takes place in controlled temperature steel tanks with intense initial pumping over and delestage (especially in the initial phase) and lasts for about two weeks. Selected yeasts activate the fermentation. The wine is clarified using substances of vegetable origin (BIOVEGAN).
after vinification which takes place exclusively in stainless steel, the wine remains in steel silos for three years before being bottled. Don Filippo is a cru produced in an extraordinary limited edition of 900 bottles.
Visual: it has a bright and compact ruby red color.
Olfactory: intense aromas of red fruit typical of the Primitivo: cherry and blackberry, these sensations are flanked by the sweet memories of dried fig, carob and candied orange peel. Secondly, it spreads floral notes of flowers dried rose together with perceptions of Mediterranean scrub and balsamic notes of eucalyptus.
Taste olfactory: the sip envelops you with its refined sweetness. Tannins are silky and seductive. The vitality of the freshness characteristic of the primitivo (the great ability of this vine to accumulate sugars while maintaining a good level of acidity, make it ideal for a sweet and elegant wine) and the typical flavor of the wines of the lands of Manduria, perfectly balance the alcohol content of Don Filippo DOCG 2016. A wine with a long finish that closes coherently on the same fruity notes of the nose.
wine for meditation and special occasions. It goes well with chocolate desserts and blue cheeses.
